Wait, what's fermented coffee?

Coffee beans start life as the seeds inside a small red fruit called a coffee cherry. Once the cherries are picked, the seeds have to be separated from the fruit and dried, and fermentation is a natural part of that process. It happens to almost every coffee you've ever had. Farmers control how long it runs and what it happens with, because that shapes how the coffee ends up tasting.

So where does the watermelon come in?

For this coffee, the fermentation happens with watermelon. The beans sit and ferment alongside the fruit, soaking up its sweetness and flavour before they're dried. They arrive at our roastery as green coffee, already carrying that watermelon character, and we roast them here in Sydney.

Doesn't a dark roast kill the fruit?

Usually, yes. Dark roasting tends to flatten fruity flavours. This one holds on. At 20% of the blend, the watermelon comes through clearly on top of a dark, bold base, so you get the sweetness without losing the punch.
